
Meatball Curry
You will need to prepare the mince meat in advance using the spicy burger patties recipe, link below.
Ingredients
2 tablespoons oil
2 medium onions - finely chopped
4 cloves of garlic and equivalent amount of ginger - peeled and crushed
1 teaspoon Sorpotel Curry Paste
1 can of chopped tomatoes
1 x Spicy Burger recipe, rolled into meatballs
200g potatoes peeled and diced
1 teaspoon salt
Method
Heat oil in saucepan. Add onions and fry on a low heat for 5 to 10 minutes. (DO NOT RUSH THIS STEP). Add garlic and ginger and fry for 2 minutes.
Stir in Sorpotel Curry Paste and cook for another minute. Add chopped tomatoes, and salt and bring to the boil and simmer for 5 minutes, stirring occasionally. Carefully lower the meatballs into the sauce and add a little water or stock until meatballs are just covered. Add potatoes and simmer until the potatoes are cooked, stirring gently.
Top with some freshly chopped coriander and serve with steamed rice, pilau rice or naan.
